Ingredients
- 1/4 cup of unsweetened peanut butter
- 1/4 cup of water
- 1 tablespoon of low-sodium tamari
- 1 clove of crushed garlic
- 1 teaspoon of grated fresh ginger
- Zucchini noodles from about 2 medium-sized zucchinis
- Optional garnish
- Chopped peanuts
- Red pepper flakes
- Handful of scallions
Instructions
- Combine the water, peanut butter, tamari, ginger, and garlic in a bowl.
- Combine the noodles and sauce until well mixed.
- Garnish and serve.
