Ingredients

  • 1 medium zucchini
  • 1 1/4 cup of basil
  • 1/3 cup of water
  • 4 tablespoons of pinenuts
  • 2 tablespoon of lemon juice
  • 1 medium avocado
  • 12 cherry tomatoes, sliced

Instructions

  1. Prepare the noodles using a spiraliser or peeler. Blend the remaining ingredients minus the cherry tomatoes in a blender until smooth.
  2. Mix the avocado sauce, noodles, and cherry tomatoes in a bowl.
  3. Serve
