Ingredients

  • 1/4 cup of unsweetened peanut butter
  • 1/4 cup of water
  • 1 tablespoon of low-sodium tamari
  • 1 clove of crushed garlic
  • 1 teaspoon of grated fresh ginger
  • Zucchini noodles from about 2 medium-sized zucchinis
  • Optional garnish
  • Chopped peanuts
  • Red pepper flakes
  • Handful of scallions

Instructions

  1. Combine the water, peanut butter, tamari, ginger, and garlic in a bowl.
  2. Combine the noodles and sauce until well mixed.
  3. Garnish and serve.
