Ingredients
- 1/4 head of white or green cabbage (8.8 oz)
- 1/4 head of red cabbage (5.3 oz)
- 1/2 a celeriac (2.8 oz)
- ½ a fennel bulb (4.1 oz)
- For Russian dressing:
- 1/3 cup of mayonnaise (2.6 oz)
- 2 tablespoons of soured cream or coconut milk
- 1 tablespoons of Sriracha chili sauce
- 1 pickled cucumber (2.3 oz)
- 1 teaspoon of freshly grated horseradish
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of freshly chopped parsley
- 2 tablespoons of freshly chopped chives
- 1/4 teaspoon of salt or more to taste (I like pink Himalayan)
- Some freshly ground black pepper
Instructions
- Halve and chop the fennel and cabbage using a food processor. Next, grate the celeriac and tranfer into a bowl with the fennel and cabbage.
- Next, prepare the Russian dressing. Grate the horseradish and cucumber. Next, add in the coconut milk or soured cream, mayo, lemon juice, Sriracha sauce, and finely chiopped parsley and chives.
- Season with pepper and salt. Pour into the bowl containing the cabbage and combine properly. Serve.
