Ingredients

  • For Fudgesicles
  • 27 oz of coconut milk (2 cans)
  • 3 oz of unsweetened chocolate or dark chocolate with at least 90% cocoa solids
  • 1/4 cup of cocoa powder
  • 2 teaspoon of vanilla extract sugar free
  • 2 teaspoons of cinnamon
  • 1/2 teaspoons of ground nutmeg
  • For the Chocolate Coating
  • 2 oz of dark chocolate 90% cocoa solids
  • 2 tablespoons of melted virgin coconut oil
  • If desired: unsweetened shredded coconut or chopped nuts, hazelnuts, almonds, pecans

Instructions

  1. Boil the coconut milk in a saucepan until it bubles, then remove from the heat and add in the cocoa powder, chocolate, vanilla extract, nutmeg, and cinnamon. Stir until well mixed. Set aside to cool.
  2. Pour the mixture into popsicle molds, add in the popsicle sticks and chill in the freezer for about four hours.
  3. Prepare the coating: melt the coconut oil and chocolate in a hot water bath. Remove the popsicles from the molds by dipping the mild in hot water for ten seconds. Dip the popsicles in the chocolate mixture and sprinkle with preferred toppings. Serve.
