Ingredients

  • 2 avocados, peeled and seeds removed ( 7.1 oz)
  • 4 tablespoons of extra virgin olive oil (2 fl oz)
  • A bunch of fresh basil ( 1.8 oz)
  • 1 medium lemon, ¾ juiced (about 3-4 tablespoons )
  • 1/2 teaspoon of apple cider vinegar
  • 1/8 teaspoon of salt
  • 1/4 teaspoon of cracked black pepper
  • 2 tablespoons of pine nuts (20 oz)

Instructions

  1. First, preheat the oven to about 400 degrees F, then transfer the pine nuts to a baking tray. Roast in the oven until golden, about six minutes.
  2. Pour the avocado, fresh basil, three tablespoons of extra virgin olive oil. Lemon juice, salt, apple cider vinegar, pine nuts, and pepper in a food processor.
  3. Blend the mixture until smooth and pour into a bowl. Top with the fresh basil, the rest of the pine nuts, and one tablespoon of olive oil. Season with pepper and salt if desired.
