Ingredients
- 2 avocados, peeled and seeds removed ( 7.1 oz)
- 4 tablespoons of extra virgin olive oil (2 fl oz)
- A bunch of fresh basil ( 1.8 oz)
- 1 medium lemon, ¾ juiced (about 3-4 tablespoons )
- 1/2 teaspoon of apple cider vinegar
- 1/8 teaspoon of salt
- 1/4 teaspoon of cracked black pepper
- 2 tablespoons of pine nuts (20 oz)

Instructions
- First, preheat the oven to about 400 degrees F, then transfer the pine nuts to a baking tray. Roast in the oven until golden, about six minutes.
- Pour the avocado, fresh basil, three tablespoons of extra virgin olive oil. Lemon juice, salt, apple cider vinegar, pine nuts, and pepper in a food processor.
- Blend the mixture until smooth and pour into a bowl. Top with the fresh basil, the rest of the pine nuts, and one tablespoon of olive oil. Season with pepper and salt if desired.
