Ingredients
- Dressing:
- 3/4 cup of paleo mayonnaise (5.8 oz)
- 2 tablespoons of fresh lemon juice
- Pepper and salt
- 2-4 tablespoons of chopped dill
- If desired : 1-2 teaspoon of apple cider vinegar or coconut vinegar
- For Salad:
- 3 large cucumbers, sliced (1 lb)
- 7.1 oz of radishes, sliced
- 1/2 red onion, sliced ( 3 oz)
Instructions
- Make the dressing by combining the mayonnaise and lemon juice. Then add in the pepper and salt. Add in about two teaspoons of vinegar if desired. Then add in the chopped dil and combine.
- Slice the red onion, cucumber, and radishes using a knife or food processor with slicing blade. Pour the vegetables into a bowl.
- Pour the dressing over the vegetables. Stir to combine. Serve as dinner or an appetizer. It can be stored in the fridge for about two days.
