Delicious Peanut Chocolate Chip Cookies

Ingredients

  • 1 cup of peanut flour
  • 1 cup of almond flour, or ground almonds
  • 1/2 teaspoon of bicarbonate of soda
  • 100g of stevia or other sugar substitute
  • 1/4 cup of vegetable or coconut oil
  • 1/4 cup of almond milk
  • 2 teaspoon of vanilla extract
  • 1/3 cup of dark chocolate chips

Instructions

  1. First, preheat the oven to about 340 degrees F, then line a baking tray with some parchment paper.
  2. Combine the almond flour, peanut flour, sugar, and bicarbonate of soda in a mixing bowl. Add in the milk, oil, and vanilla and whisk until a dough is formed. Fold in the chocolate chips.
  3. Roll the dough and press into cookie shapes. Transfer to the oven and bake for about twelve minutes. Ensure you turn the cookies for even baking.
  4. Set aside to cool completely before serving. You can chill in the fridge for thirty minutes.
