Ingredients
- 1 cup of peanut flour
- 1 cup of almond flour, or ground almonds
- 1/2 teaspoon of bicarbonate of soda
- 100g of stevia or other sugar substitute
- 1/4 cup of vegetable or coconut oil
- 1/4 cup of almond milk
- 2 teaspoon of vanilla extract
- 1/3 cup of dark chocolate chips
Instructions
- First, preheat the oven to about 340 degrees F, then line a baking tray with some parchment paper.
- Combine the almond flour, peanut flour, sugar, and bicarbonate of soda in a mixing bowl. Add in the milk, oil, and vanilla and whisk until a dough is formed. Fold in the chocolate chips.
- Roll the dough and press into cookie shapes. Transfer to the oven and bake for about twelve minutes. Ensure you turn the cookies for even baking.
- Set aside to cool completely before serving. You can chill in the fridge for thirty minutes.
