Ingredients
- 1 1/2 cups of drained mixed olives in brine (7.1 oz)
- 2 garlic cloves, crushed
- 2-3 sprigs of rosemary, roughly chopped
- 2 fresh bay leaves
- 3–4 strips of lemon zest
- 4 tablespoons of lemon juice (2 fl oz)
- 1/2 cup of extra virgin olive oil ( 4 fl oz)
- 1/2 teaspoon of sea salt
Instructions
- Make the lemon zest using a vegetable peeler. Then juice the lemon.
- Drain the olives and rinse. Pour into a bowl and add in the garlic, herbs, and lemon zest.
- Combine four tablespoons of lemon juice with salt and oil. Stir until the salt is dissolved.
- Pour the mixture over the olives and set aside to marinate for about four hours.
- Drain the liquids and serve.
