Ingredients
- For Slaw:
- 2 cups of shredded green cabbage ( 5 oz)
- 1 cup of shredded red cabbage ( 2.5 oz)
- 1/2 cup of minced cilantro (0.7 oz)
- 8 small green onions, thinly sliced (3.5 oz)
- For Lime Dressing:
- 1/4 cup of avocado oil or extra virgin olive oil (60 ml)
- 2 tablespoons of paleo mayonnaise ( 1.1 oz)
- 1 lime, juiced (30 ml)
- 1 clove of garlic, minced
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of black pepper
Instructions
- Combine the dressing ingredients in a jar and set aside. Mix the cilantro, cabbage, and green onion in a bowl. Pour dressing over the cabbage and toss to combine.
- Place in refrigerator. Serve when ready to eat. It can be stored in the refrigerator for about four days.
