Ingredients

  • 1 1/2 cups of drained mixed olives in brine (7.1 oz)
  • 2 garlic cloves, crushed
  • 2-3 sprigs of rosemary, roughly chopped
  • 2 fresh bay leaves
  • 3–4 strips of lemon zest
  • 4 tablespoons of lemon juice (2 fl oz)
  • 1/2 cup of extra virgin olive oil ( 4 fl oz)
  • 1/2 teaspoon of sea salt

Instructions

  1. Make the lemon zest using a vegetable peeler. Then juice the lemon.
  2. Drain the olives and rinse. Pour into a bowl and add in the garlic, herbs, and lemon zest.
  3. Combine four tablespoons of lemon juice with salt and oil. Stir until the salt is dissolved.
  4. Pour the mixture over the olives and set aside to marinate for about four hours.
  5. Drain the liquids and serve.
